When I started making these delicious low carb zucchini pizza boats for my family, I was thrilled because they were an instant hit! These zucchini boats are the perfect way to sneak in vegetables, are really filling, and are so easy to make. You can add any meats, veggies or cheeses you like, and they are sure to become a family favorite meal! You could even make them in the air fryer.
We try to eat low carb as often as possible, but finding different things to eat can be hard, and eating the same things can get really boring. The first time I made these zucchini pizza boats, I knew they would be added to our menu weekly. They are simple, cheap and take minutes to put together, and they are the perfect way to add vegetables to our diet without them tasting plain or just blah. We make them different almost every single time we eat them, sometimes adding sausage, ground taco meat, pepperoni, banana peppers, different cheeses, mushrooms and more...they come out perfectly delicious every single time! You can even let your kiddos make them with you and add their own toppings!
How to Make Zucchini Boats
To make a zucchini boat, which will be the vessel for your "pizza," you simply slice a zucchini in half lengthwise and use a spoon to remove the soft center of the zucchini.
Note: You can stuff zucchini boats with so many different things...you don't have to turn them into pizzas! They can be vessels for nachos, pasta sauce, different meats and so much more...just get creative with them!
How to Make Zucchini Pizza Boats
Preheat your oven to 400° F and place your zucchini boats on a baking sheet that has been lined with parchment paper. Add pizza sauce to the center of the boats, making sure not to overfill them. You can totally use store bought pizza sauce or make your own by blending 1 cup of tomato sauce, 2 cloves of garlic, ½ teaspoon of salt and ½ teaspoon of oregano.
Now, top with mozzarella cheese and bake for 25 minutes, or until the zucchini is fork tender and the cheese is melted and browning on top.
Remove from the oven, sprinkle with freshly grated parmesan cheese and enjoy!Print

- 4 Zucchinis
- 1 cup tomato sauce
- 2 garlic cloves
- ½ tsp salt
- ½ tsp oregano
- 1 ½ cup shredded mozzarella cheese
- parmesan cheese
- Preheat the oven to 400F.
Grease a baking sheet or line it with baking paper.
Trim off the ends of the zucchini and cut them in halves, lengthwise.
Use a small spoon to remove part of the inside of the zucchini to shape them like boats.
To make the sauce, place tomato sauce, garlic cloves, salt and oregano in a blender and blend until smooth.
Spoon the sauce in the inside of each zucchini, making sure not to overfill them.
Top the zucchini boats with shredded mozzarella.
Bake for 25 minutes or until zucchinis are fork tender and mozzarella is melted and browning on top.
- Sprinkle with parmesan cheese.
You can make these zucchini pizza boats using store bought pizza sauce if you don't want to make your own...just skip the tomato sauce, garlic, salt and oregano.
Top your pizza boats with any toppings you desire, like pepperoni, ham, sausage, banana pepper, onions and more!
