Avocados are one of my absolute favorite fruits...did you know that the avocado is technically a fruit? In fact, it's a single-seeded berry...crazy right? Great news for other fans of this incredible fruit! Anyhoo, we add avocado to just about everything...salads, soups, eggs, sandwiches and sometimes eat them as a snack. My favorite way to enjoy avocado is my daughter Kate's famous spicy guacamole! When she makes it, I find myself trying to hide it from everyone else...it's that good! Well, today, she has given me permission to share her recipe with you. You are going to love it! It's got just the right amount of spice, is super fresh and can be added to tacos, salad, sandwiches or you can sneak and eat it by the spoonful like I do sometimes ;)

You start with two Avacados from Mexico.
Scoop the avocado fruit out and mash with a fork or mash with a mortar and pestle if you have one.
In a small bowl, mix together 1 Teaspoon of store bought southwest seasoning, ½ Teaspoon of kosher salt, ½ Teaspoon red pepper flakes and mix together.
Stir them into the guacamole and add ½ the juice of a lime. Mix together well.
Place the ½ lime upside down in the middle of your guacamole and place plastic wrap over the guacamole making sure it touches the top of all of it to prevent browning. Refrigerate for at least 2 hours.
Serve with tortilla chips or carrots! I would recommend doubling the recipe, because this stuff goes fast! We will be serving it at a friend's party for the big game this evening!
